This section is all about taking one meal and making it into multi night, reusable, changeable and money saving home cooked goodies to keep the wallet and the belly full!
I base these meals on a single person, so if you are feeding two or more you will have to up the amounts you use of course.
It is very easy to eat many processed foods, and everyone loves home cooking. most of these meals I use a slow cooker for, they are good for you, minimal processed and I can come home to a nice hot meal after a long days work.
Meal 1:
Day 1
You will need:
Pot roast, 2-3 Lbs
5-6 red potatoes
Place in slow cooker on low,for 8-10 hours, slice potatoes in half place around pot roast, cover with enough water or beef broth to just cover meat, season to taste.
Take out meat and potatoes save the left over beef broth in the fridge for day 3.
Day 2
Have left over meat and potatoes
Day 3
You will need
any left over Beef, if no beef you can use pork chops or any other red meat.
box of broccoli rice or any other flavor rice$1.00 most stores for uncle Ben's
skim fat off top of beef broth and dispose of, put liquid in the slow cooker
Place meat of choice into cooker, as well as any left over potatoes you have.
Pour rice in on top, you can add extra broccoli or any other veggie you want.
cook on low, another 8-10 hours
Enjoy for the next 2 evenings or so depending on how much you make.

Meal 2:
Day 1
You will need:
2-3 large boneless chicken breasts
1 soup mix such as Lipton chicken noodle or the like. usually $1.00 or less for 2 pack.
box of your choice flavor rice $1.00 most stores for uncle Ben's
your choice any extra veggies.
Place chicken breasts in bottom of slow cooker, put soup mix, rice mix and your choice of veggies for the day. I like the broccoli Cheddar rice, so I add extra broccoli. Fill half way with water or Broth if you have it, Chicken in the slow cooker can get some what.. boiled tasting if not properly seasoned. But water is just fine.
cook on low, 8-10 hours. Strain off extra water and 1 of the chicken breasts and put in the fridge for later.
Day 2
enjoy the rest for the next couple days.
Day 3
break up left over chicken and put into the crock pot, take off any fat skim from the top of the left over broth and dispose of. then place into slow cooker as well. Add any left over veggies, or new veggies you want. Since this is a soup base you can add more seasoning, or the second package of soup mix if the broth is to bland.
cook on low for at least 5 hours, but the normal work day of 8-10 hours wont hurt anything.
cook box of pasta noodles $1.00
add to broth and chicken mixture, and serve!
home made chicken soup for the next few days to enjoy!

3-5 meals for under $8
Meal 3:
Day 1
You will need:
1-3lb Pork roast
3-5 Potatoes cut
half a bag frozen carrots or other veggies.
Place in to slow cooker, fill till veggies and pork are just covered, you can add beef broth, or any seasoning to taste.
Cook on low for 8-10 hours.
Save Broth and any left overs for next day.
Day 2
Put left over broth, and veggies and any meat you have left over. Put in a packet of your choice favorite rice. I like Broccoli cheese. If you have no left over meat you can use pork chops or hamburger or any meat you want to use. Top off with the rest of the bag of carrots, and broccoli and what ever veggies you like.
Cook on low 8-10 hours.
enjoy for another 2-3 evenings.
